Pressure Cooker Meatloaf and Potatoes

A faster way to make meatloaf! While watching an infomercial for an electric pressure cooker, I came across some really cook recipes but was skeptical as to how they would turn out. This recipe for pressure cooker meatloaf may become my new method of cooking. I used a cake pan that fit into the pressure cooker to make this recipe. Since I did not have another one that I could stack to make the potatoes, I used my new favorite recipe for making roasted potatoes to accompany the meatloaf.

Here is how my pressure cooker meatloaf and potatoes turned out. Both were made in the Cuisinart Electric Pressure Cooker. I stacked these baking pans on top of each other.

Meatloaf pan is stacked on top of the pan containing the herb potatoes. Here is the video I saw on YouTube by Bl Holland. I used my own recipe for the meatloaf but I followed her cooking instructions on how to make the potatoes and meatloaf together. Also, since I didn’t have the pressure cooker pans that she used in her demonstration, I used two Wilton cake pans instead and they worked great!
