Solita’s Keto Chocolate Chip Cookie Mounds

Gita’s makes keto cookie mounds using Lakanto Powdered Monkfruit

Ingredients

3/4 cup Almond flour
1/4 cup Coconut flour
1/2 tsp Salt
1 tsp Baking powder
1/2 cup unsalted butter (soft/room temp)
1/2 cup Lakanto Powdered Monkfruit sweetener
2 Tbsp Lakanto Maple Flavored Syrup
1 tsp Vanilla Extract
1 large Egg
1/2 Lily’s Chocolate Chips (stevia)
1/4 cup chopped pecan

Instructions

  • Preheat oven to 350 degrees
  • Combine almond flour, coconut flour, baking powder, salt. Set aside.
  • In a separate bowl, beat butter, Monkfruit powder, Monkfruit maple, egg, vanilla until well combined.
  • Add flour mixture slowly into the butter using a wooden spoon.
  • Add chocolate chips & pecans.
  • Use small scoop on parchment leaving at least an inch between each cookie. Note: they will remain mound shaped after baking. Press gently for disc shaped cookies
  • Bake for 8 min. Rotate the tray bake for another 3 minutes or until bottoms/edges are golden brown.
  • Allow cookies to cook on a cooking rack.
